I recently started working in the school system, which has been a great change, but I’m starting to get the Is-it-Thanksgiving-Break-Yet itch. I know, I know, both everyone and no one wants Thanksgiving to actually come around: Thanksgiving means that the end of fall is nearing, which means the start of winter…but Thanksgiving also means that days off from work are coming up. It is, like most things, a Catch-22.
But back to my job for just a minute. One of the reasons I accepted this position was that it gave me not only the typical school breaks (Thanksgiving, Christmas, Spring break, etc.) but I get a fall break. As in a-whole-week-off 6 weeks before Thanksgiving actually happens. (How did I get so lucky? Also, I’m excited for my upcoming post about what I’m doing to this break, which I am actually on right now. Cheers for finally figuring out the schedule in advance feature for posts. Duh. Blogging 101 over here in the SoV household.) I’m really excited about it, but I feel weird going on-and-on about a fall break when the weather here doesn’t seem autumnish at all; I am still comfortably wearing shorts and t-shirts on the weekends. As much as cold climates and I disagree, I already miss fall. Though I can’t tolerate pumpkin spice lattes anymore from my once favorite coffee place, I do miss seeing the leaves change and layering up to go through night-time corn mazes and football games.
Regardless, as the school year becomes more and more intense as this so-called “fall” progresses (why does everything seem to happen the end of September and October?), I am more and more appreciative of quick and easy weeknight meals. I cannot even believe I am saying this when I don’t even have kids, but I empathize with the busy parents that are fighting the good fight for healthy, easy, and quick weekday meals.
Well, readers, I think I have a recipe that will make weeknight meals a little easier. It’s a crowd pleaser, for both adults and kids (bonus points if you read this book along with your kids just before eating), and doesn’t take a whole lot of time. The Paleo tortillas can be made in advance, and can be easily stored in the fridge for easy grab-and-go access. The seasoned meat can also be done in advance, as this reheats well. Food prep Sunday, anyone?
Soft-Shell Paleo Tacos
Makes 12 tacos
For the tacos:
- 12 Toothpicks
- Paleo Tortillas from Stupid Easy Paleo (I doubled the recipe and then made smaller tortillas for these taco purposes)
- 1 tbsp. olive oil
- 1 tsp. minced, fresh garlic
- 12 Toothpicks
- 1 lb. organic, grass-fed ground beef
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (optional, using cheese is not Paleo)*
- 1/2 cup shredded lettuce or chopped salad greens (I personally prefer greens)
- Green Chile Salsa Verde or salsa of choice
Paleo Taco Seasoning Mix:
- 2 tsp. Ground cumin
- 1 tsp. Ground chili powder (I use Hatch)
- ¼ tsp. cayenne pepper
- 1 tbsp. paprika or smoked paprika
- 2 tsp. garlic powder
- 1 tsp. ground onion powder
- 2 tsp. ground dried oregano
- Ground pepper and sea salt to taste
- Mix spices together in a small bowl and stir until incorporated. Set aside.
- In a large pan, heat oil in pan on medium heat. Add garlic and cilantro and cook until fragrant.
- Add spices to oil, and then add ground beef immediately after.
- Cook ground beef on medium heat until thoroughly cooked and browned.
- Once cooked and cool enough to handle, fill each paleo tortilla with ground beef. Top each taco with desired toppings, and fold sides of tortillas upward to make a taco shape. Secure with a toothpick through the middle. Garnish with cilantro (optional) and enjoy!
*Adding cheese to these tacos makes them not paleo, technically, since the paleo diet does not incorporate cheese. However, if you are going to top these delicious tacos with cheese, its best to buy a high quality organic, grass-fed, pasture-raised cheese and shred it yourself. Not are you avoiding all the growth hormones and added antibiotics by going organic, but already shredded cheese from the store often contains chemicals that ensure they don’t melt and retain their shredded shape. Ewww, let’s avoid putting those chemicals in our bodies.
